Paleo Apple Banana Muffins

The paleo challenge has begun at EXP so everyone is sharing recipes. I made these today so John and Elena had something to take to take with them in their lunches. They came out so yummy!! Here's the recipe:

2-1/4 cups almond meal
4 omega 3 enriched eggs
1 organic apple finely chopped
1 very ripe banana
1/4 cup melted/liquified coconut oil
1/3 cup water
1/2 tsp baking soda
1 heaping tbsp cinnamon

preheat oven to 350. mash bananas and mix with chopped apples. add other ingredients and mix by hand. should be like cake batter. fill muffin cups 3/4 way full and bake for 15-17 min or until toothpick comes out clean.

Add blueberries or nuts for some added texture. Enjoy!

Rosaries

Today I finished up a project I've been working on for a few months. Our friend Barbara Culhane lost her 11 yr old daughter a few months ago in a tragic accident. She was one of John's co-workers at Fastech. The whole family has been devastated so we wanted to do something for them. One of the things we decided to do for them is have these rosaries made for them from rose petals given to the family at the funeral. We took up a collection and raised over $600. The rosaries came out beautiful. They are going to give a set to each of the priests at their church where their daughter was an altar server. I have a bracelet given to me when my father passed away 25 years ago and it's something's I treasure. I hope they fel the same someday.

The excess funds were used to purchase a gift certificate at a spa here in Groton for her and her other teenage daughter. Hopefully they can use it to do something relaxing and healing for themselves. I'm sure they could use it. When you think you're having a bad day, all you have to do is think of Barbara. Doesn't seem so bad anymore.

So I thought since John was hogging the computer that I would try to finish my blog from my phone and apparently I can't finish a blog but I can POST a new one so here goes!

Meatball Soup

Made this today - thought I'd share....

Yummy Paleo Meatball Soup. NO LIE... YUMMM-EEEEE!



Paleo Meatball Soup

Ingredients

3 tbsp olive oil

1 medium onion, minced

3 celery stalks, thinly sliced

2 cloves of garlic, chopped

2 (14.5 oz.) can crushed tomatoes, with juice (canned only tomatoes)

2 box beef broth

2 tsp oregano

3 tbps of fresh basil

1 tsp pepper

1 egg

1 lb. ground beef

1 tsp garlic powder

1/4 cup almond meal

3 cups baby spinach

1-2 cup of each broccoli and cauliflower (I used 2)

1-2 zucchini chopped (I used 2)

1parsnip sliced (I ommitted this - not my favorite veggie)

Instructions

Heat 3 tbsp of olive oil in a soup pot.Add in onion and celery, and cook until soft, about 10 minutes. Add the garlic and cook 1 minute. Add crushed tomatoes and their juices, beef broth, other vegetables, 1 teaspoon oregano, 2 teaspoons basil, and 1/2 t. salt. Bring to a simmer.

While the soup simmers make the meatballs.

Instructions

In a bowl combine ground beef, egg, almond meal, 1 teaspoon oregano, 1 t. pepper and 1 tbsp of garlic powder.

Mix with your hands until well combined. Divide into tablespoons and roll into smooth firm balls. As you work gently drop the meatballs into the soup.

Add spinach and remaining basil and simmer for 20 minutes until meat is cooked through. about 1 hour

Catching up!


Yes, it's been a LONG time since I've written anything here. Sorry! Of course, maybe I'm the only one reading it so it's okay!
So yesterday, after spending the day helping Maria organize her house, I drove the hour to Worcester and let the Garmin weave me through the scariest part of Worcester... yikes! It was very scary at times but I made it with a few minutes to spare. Of course, Joey couldn't come out and meet me because he couldn't/wouldn't find his shoes! Ah! college students! It was a quick visit because he was squeezing us in between his girlfriend and his friends' birthday celebrations! I guess we should be happy we got in at all right Joey??? We delivered the birthday cupcakes and the gifts - an over-the-door nerd basketball hoop (by request) and a huge bag of chocolate from Maria (yes, he loved it!). We didn't get to sing happy birthday which I personally found disappointing but didn't seem to break JOEY'S heart! Oh well. He'll be home next weekend for spring break so we can spend some time together then. That is if he hasn't already planned out every minute with his friends! haha!

So many things coming up in the next few weeks and months... SAT's and college visits for Sam. (We had a great day visiting Emerson and BU last Wednesday!) Soccer season is starting up for Elena and John is embarking on a travel schedule that will have him gone once every other week for 3 days. Yay! (just kidding hunnie!)

As for me, I'm on some new meds which, dare I say it, seem to be helping! I'm afraid to be too optimistic but things are looking good. Maybe this time next year I'll have a real full time job or be leading a band! One can only hope!

That's it for now. I'm hoping to be better at keeping this up to date and hopefully a little practice will make it more interesting too!
